Irish Moss
A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

A general term for chocolates containing 15% to 35% chocolate liquor and less than 12% milk solids. Straight from the grinding mill with ingredients like cocoa butter, sugar and vanilla added to make it palatable. It has a deep to moderate chocolate flavor, ranging from fruity to earthy, with minimal dairy or milk flavor. Bean blend determines flavor more than milk ingredients.

Discussion
Good mouth feel, just not as much cherry as I had hoped.

Rather than using the 4 oz of dark chocolat and 4 oz of cherry extract I used 12 oz of Cocoa Nibs from our local co-op and 32 oz can of Oregon Fruit Cherry Puree. Overall the smell is awesome, taste is really chocolaty but a little light on the cherry side. Will brew again with a bit more cherry for my taste.
