Ferments dry and crisp, leaving a complex but mild flavor. Produces an extremely rocky head and ferments well down to 55F.
Notes
Mash: 2.25 gal. filtered water, 6.75 RO water, 9 g. CaCl. 3.5 gal. @175 138F. 5 min. Imediately decoct 1 gal grain, 10 min rest at 150. main mash: 45 min. rest @ 150F. Sparge 170F. to collect 7 gal. Boil 90 min. Supermoss and yeast nutrient 1/4 tsp. each 10 min. Cool, aerate 15 min. Ferment 65 F. 10 days in primary bucket.
