  • 3.5 oz Chinook - 12.7 AA% pellets; boiled 80 min

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 2 oz Centennial - 12.7 AA% whole; boiled 25 min

    Centennial

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1.5 oz Galena - 12.7 AA% whole; boiled 2 min

    Galena

    Neutral. This hop can be very bitter, but blends well with finishing hops. Used in American ales and lagers, but suitable for all beer styles. Aroma is medium but pleasant.

    Wyeast 1318 London Ale III™

    From traditional London brewery with great malt and hop profile. True top cropping strain, fruity, very light, soft balanced palate, finishes slightly sweet.

Notes

Yeast is Wyeast VSS West Yorkshire Water treated with 0.5g/gal CaOH Mashin-140 steam infused to 170 over 1.5 hrs. Hops were a mix of Amarillo(28.6%), Summit(28.6), Chinook, Galena & Centennial (each 14.3% of total hop weight). This mix of hops is estimated at 12.7 %AA when considering the additions.
