I used British John Bull extract, with its high level of unfermentables (oops...who knew?) and ended up on the robust, lush end of the IPA spectrum...Great body but highly fruity. Actual FG was 1.016.

2-stage Fermentation; First tastes...

I kept this in the primary for two weeks trying to get the gravity down. At one-week it was stuck at 1.028. I added one crushed Beano tablet and it slowly recharged. (Didn't know what else to do...) After another week we racked to the secondary (with an ounce of Willamette dry hopped). Bottled one week later with a FG of 1.016. Ten days later, (Feb 4) the first sample was ridiculously high in fruity esters. It has a tan, creamy head (aided by the Carapils) and a lush, thick feel in the mouth. The bitters are most pronounced on the swallow. Fantastic lingering smoothness. Almost mouth watering. I would hop it more next time. Not a classic American IPA. Unusual but very drinkable.

Well.....We've certainly managed to drink the stuff -- But I have a few "learning experiences" to share. First off, this ale has an huge, uncontrollable head. WAY too much foam. I attribute it to the admitedly-desperate act of throwing a Beano into the primary. The enzyme never leaves -- so I suspect the high-levels of big sugars continued to be broken down in the bottle -- meaning more food for the yeasties adn a large head. But no bottle bombs, surprisingly. Second, there is way too much of an estery, fruity aroma when you first pour. This dissapates fairly rapidly as it warms up, making the drinking experience plesant enough -- but boy is it strong of fruit (bananas and plums) up front -- Not your classic IPA. This may be from the beano -- again -- or possibly fermenting too warm. Overall, this DOES have a great mouthfeel and a pleasant, earthy/bitter finish that leaves you wanting another big gulp -- definitely NOT a sipper.

The head is still huge, but if you pour at a shallow angle you can reduce it some...But the real news is that this brew is aging nicely -- the fruitiness is there but much less in-your-face than earlier. It is ultimately a very drinkable ale -- still very lush in the mouth. Good, strong balance in the bitters.
