Ingredients (All Grain25 L)

  • 5.6 kg Maris Otter Pale

    Maris Otter Pale

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1.1 kg English Brown Malt

    English Brown Malt

Imparts a dry, biscuit flavor. Used in nut brown ales, porters and some Belgian ales.

  • 0.38 kg British Black Patent

    British Black Patent

Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • 155 g Goldings - 5.0 AA% whole; boiled 90 min

    Goldings

    Mild. Slightly flowery.

  • White Labs WLP005 British Ale

    White Labs WLP005 British Ale

This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

A little taste of history

Racked to keg/bottles. This tastes pretty amazing. You'd think with all that black malt in there, as well as the brown, that this would be overpoweringly 'roasty'. But it is not. There is a good roast character, but it has a good backbone of malt sweetness and a rich flavour. Bitterness is well balanced - not as high as the beertools calculation gives I suspect. All round a great beer that should age well. fg 1.014
