Ingredients (All Grain5 gal)

  • 9.00 lbs Maris Otter Pale

    Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 2.00 lbs English Brown Malt

    English Brown Malt

    Imparts a dry, biscuit flavor. Used in nut brown ales, porters and some Belgian ales.

  • .625 lbs British Black Patent

    British Black Patent

    Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • .75 oz Fuggle - 5.0 AA% pellets; boiled 80 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • Wyeast 1099 Whitbread Ale™

    Wyeast 1099 Whitbread Ale™

    A mildly malty and slightly fruity fermentation profile; not as tart and dry as 1098 and much more flocculant. Clears well without filtration.

Notes

Mash grains at 155-158F. Boil for 90 minutes. Let it sit in secondary at least 2 months. Age at least 4 months in the bottle before drinking.

My favorite porter.

Haven't brewed this 2 or 3 years. It's getting time to do it again. Very nice old style porter. Roasted malt taste with a hint of licorice and a nice slightly hoppy aftertaste.
