I came up with this recipe as an attempt to create a "classic" 80/- Ale. I compared this to McEwan's IPA, a very fine beer, and I like this one better. It is a little drier and has a nicer mouthfeel. As for the name: Brown is a "sept" (family) of clan MacMillan.

Ingredients (Partial Mash5 gal)

  • 2.5 lbs Golden Promise Pale

    Golden Promise Pale

    An especially sweet and clean variety of barley which results in full and malty sweet beer. It has superb hush integrity and delivers fast and consistent mash tun drainage. This malt variety is perfect for brewing up a clear, bright pint.

  • 0.125 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 0.5 lbs British Crystal 55°L

    British Crystal 55°L

    Sweet caramel flavor, adds mouthfeel and head retention. For pale or amber ales.

  • 0.125 lbs Belgian Aromatic

    Belgian Aromatic

    Imparts a big malt aroma. Use in brown ales, Belgian dubbels and tripels.

  • 4 lbs Dry Light Extract

    Dry Light Extract

    White color, mild flavor. Will produce lagers and Pilseners and can also be used to produce darker beers when used in conjunction with colored malts. Made of pale malt.

  • .25 lbs Malto Dextrin

    Malto Dextrin

    Adds body and mouthfeel. For all extract beers. Does not ferment.

  • 1.2 oz East Kent Goldings - 5.0 AA% whole; boiled 60 min

    Mild, slightly flowery.

  • 0.50 oz Fuggle - 4.8 AA% pellets; boiled 15 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.
