Notes
Because honey makes up about half the fermintables in this brew, it's probably more accurate to call it a "braggot" but it really tastes more like a bock. Give it a try!

Brewed 11/7/04 steep @ 150f for 30 min., remove grain, add 1# dme & bring to boil, begin hops additions. Boiling only a small part of the DME with the strained wort results in higher IBUs than calculated, since the sugars don't prevent hops utilization during the boil. It's probably closer to 30 IBU. Poured hot wort over balance of honey & dme. 11/13 transfered from primary to 7g carbuoy; already at 1.010! Flavor has a distinct sulferous note, normal with lager yeasts and expected with the c. Budbar strain... Odor of fermentation (at 60 f.) was cidery. ADDED some water & 1 c. dextrose 11/30 still at 1.009 but some activity. Added more water & 1 c. dextrose to top up 7 g. carbuoy. Optimum fermintation temp for this yeast is 50-55 f. 12/11 Still about .009 and sulphurous, but maybe not so much… Lagered on over January. Will bottle in mid-Feb and report back evenutally.

This brew turned out nicely; very clear, well-carbonated, and refreshing. Has a tart, but not sour tang, from the honey, I suspect, and the concern about a suferous odor was, in the end, a non-issue. Lager yeasts generate the stuff; it's to be expected, and the lagering period takes care of it. If you like the helles bock style, this is a recipe worth testing. Let me know how it goes for you! FB
