Russian Imperial Stout • Extract • 1 gal

A great beer with big flavor. Very good chocolate flavor. Maybe consider adding some real chocolate to make it a Double Chocolate Imperial. Although it does not meet the Imperial criteria perfectly, it tastes pretty close.

Ingredients (Extract1 gal)

  • 0.5 lbs American Chocolate Malt

  • 1.7 lbs Dry Amber; Muntons

  • 0.5 oz Fuggle - 4.8 AA% whole; boiled 35 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • Danstar CBC-1

    Danstar CBC-1

    CBC-1 has been especially selected for it's refermentation properties and is recommended for Cask and Bottle Conditioning. CBC-1 referments beers up to 12-14% ABV due to its high resistance to alcohol and pressure; it does not produce flavors therefore conserving the original character of the beer. The yeast will settle and form a tight mat at the end of refermentation. If you are looking at a clean, reproducible, consistent and rapid conditioning process this is the yeast of choice! CBC-1 can also be used for primary fermentation and is especially suitable for Champagne-like beers and fruit beers.

Notes

Very simple recipe, but it turns out very good. Somewhat sweet, but definitely not too sweet. Tastes similar to Bell's Double Cream Stout but with more flavor and a little more alcohol. This is a great brew. I did a 1 gal. batch, and am about to do a five gal. batch. I only let the beer age 1.5 weeksI was real thirsty, but I imagine it only gets better with age.
