Canadian 2-Row Malt; Canada Malting
Canadian 2-Row Malt; Canada Malting
Traditional, premium grade 2-Row malt made from the finest Canadian barley malt varieties. This malt is a suitable base for all beer styles.

German Light Munich
German Light Munich
For a desired malty, nutty flavor. Lagers, Oktoberfests and bock beer.

2-Row Brewers Malt; Briess
2-Row Brewers Malt; Briess
Mild malty flavor. Characteristics & Applications: • Base malt for all beer styles • Smoother, less grainy flavor than 6-Row Brewers Malt. • Slightly higher yield than 6-Row Brewers Malt. • Slight lower protein than 6-Row Brewers Malt. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Citra®
Citra™ is a special aroma hop variety developed by the Hop Breeding Company (a joint venture between John I. Haas, Inc. and Select Botanicals Group, LLC). It was released in 2007. Citra™ has fairly high alpha acids and total oil contents with a low percentage of cohumulone content. The variety imparts interesting citrus and tropical fruit characters to beer.

Fruitier and more flocculant than 1056, slightly nutty, soft, clean, slightly tart finish.
Notes
Kind of a Pliny the Elder clone with the ingredients I had. I used 9 ounces of Cascade homegrown hops and added them to the mash. This has more hops than Bugs Bunny. Mashed at 150F for 90 minute. Sparged at 170 F for 1 hour. Ended up with more wort than I aimed for so I did a 2 hour boil to get my brix higher. Ended up with 10 to 10.5 gallons with Brix of 18 % Should be 10% or so alcohol. Used a Blichmann chiller to chill to 70F used oxygen to aerate , pitched my Wyeast American Ale II and placed on a dog heater pad.

Dry hopped

I racked to the secondary today and added 3 oz of Centennial and 3 oz of Zythos (1.5 oz of each to two 5 gallon secondary carboys). Tasted great with some residual sweetness and nice an hoppy bitterness and flavor. Another week or so and I'll bottle it. I think this could be a winner :-)
Corked and caged

I corked and caged 5 gallons yesterday. If anything this is just getting better. It had nice citrus and piney flavor and a great hop nose. Flat it reminds me for Fiddlehead or Heady Topper IPA's. Hopefully it still will after carbonation.
Primed and taste tested

It came out great but the final flavor reminds me of Bell's Two Hearted Ale or Dogfish Head 90 minute IPA. Nice hop aroma, decent long lasting head, enough alcohol but no hot flavor, plenty of bitterness balanced with a sweetness of the malt flavor. I think it will be a big hit with people who like highly hopped IPA's. I'll be playing with making variations of this again :-)
