Apricots are optional. They probably will not add much to the flavor, but I was only looking for a hint of something different.

Ingredients (All Grain5 gal)

  • 15 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 1 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 1 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 1 lbs Oats Flaked

    Oats Flaked

    Belgian White Ale(wit), other specialty beers.

  • 2 lbs Molasses

    Molasses

    Imparts strong sweet flavor. Use in stouts and porters.

  • 1 1/2 oz Galena - 12.0 AA% pellets; boiled 75 min

    Galena

    Neutral. This hop can be very bitter, but blends well with finishing hops. Used in American ales and lagers, but suitable for all beer styles. Aroma is medium but pleasant.

  • 3/4 oz Cascade - 5.5 AA% whole; boiled 15 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1/4 oz Cascade - 5.5 AA% whole; boiled 1 min

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

Toast half the oats at 350 degress for 30 minutes. Add oats to other grains. Mash at 150 degress for 90 minutes with 18 qts water. Sparge until 7 gallons in brew pot. Boil for 90 minutes with hop schedule provided. Add jam after boil and let sit 10 minutes before cooling.
