Simple recipe with Carapils dextrine malt for a smoother mouth feel than a classic steamer. Steep grains for 30 minutes at 152F. Sparge and boil from there. Let this fabulous yeast do its work in the primary for about 10 days.

Near Perfection!

This year's Gator Steam has arrived and it is just terrific. The beer is crystal clear, tawny lion's-mane amber with a full dense head that is somewhat creamy on the lips and subsides into good lacing. A moderately minty nose of Northern Brewer hops swells over that first gulp. The mouthfeel is perfectly balanced between the clean, classic Steam-beer brightness and a softer, smoother roundness from the addition of Carapils and fairly large amounts of crystal. The taste is just a fine mouthwatering balance of malt and hops, and the finish is smooth, clean, and leaves you begging for another gulp.
