Making this beer for my wedding. Did a double batch. We'll see how it turns out.

Ingredients (Extract10 gal)

  • 2.0 lbs American Victory

    American Victory

    Provides a deep golden to brown color. Use in nut brown ales, IPAs and Scottish ales.

  • 1.0 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 16.0 lbs Dry Extra Light; Muntons

    Dry Extra Light; Muntons

    Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

  • 4.0 oz Chinook - 11.0 AA% pellets; boiled 60 min

    Chinook

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • 3.0 oz Czech Saaz - 5.0 AA% pellets; boiled 20 min

    Czech Saaz

    Very mild. 'Noble'.

  • 3.0 oz Cascade - 5.5 AA% pellets; boiled 5 min

    Spicy with citrus notes. Slightly grapefruity.

  • 4.0 oz Cascade - 5.5 AA% pellets; added dry to secondary fermenter

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

In a ridiculous newbie move, forgot to buy yeast and didn't realize until after the wort was ready. Added wort to sanitized fermenting buckets and left over night. Added W1056 American Ale yeast the next day (12 hours later). Had air bubbles forming within 5 hours. Seems to be going well.
