Maris Otter Pale
Maris Otter Pale
An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

White Labs WLP041 Pacific Ale
White Labs WLP041 Pacific Ale
A popular ale yeast from the Pacific Northwest. The yeast will clear from the beer well, and leave a malty profile. More fruity than WLP002, English Ale Yeast. Good yeast for English style ales including milds, bitters, IPA, porters, and English style stouts.
Notes
Actual OG 1.050. Be ready to lose a lot of liquid with all the hops. Hops should be Sorachi Ace, not in dropdown.

This beer is a long time gone, but I remember it fondly. One of the better beers I have ever brewed. The hop freshness was great, medium bitterness but full hop aroma and flavor.
