American IPA • Partial Mash • 5 gal

Olde Dan Stand Cherry Ale

Trying something a little crazy here. Lite malts and fairly bitter make it like an IPA, but I've used a cherry smoked malt and some charred cherry wood instead of oak... I'll let you know how it turns out. I hope you'll try it and tell me what you think.

  • 3 lbs Smoked Malt; Hoepfner Malz

  • 1 tsp Irish Moss - (omitted from calculations)

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.
