Ingredients (All Grain6 gal)

  • 11 lbs Cargill Two-Row Pale; Cargill Malt

    Cargill Two-Row Pale; Cargill Malt

This malt is well modified, clean tasting, and moderate in total protein. It will provide you consistent brewhouse performance for all beer styles.

  • 0.5 lbs Caramalt 33; Bairds Malt

    Caramalt 33; Bairds Malt

Caramalts are used to give colour and flavour to pale Lager beers but should be used with care to avoid making the beer too dark or giving it too cloying a flavour. They also change the oxidation - reduction state of a beer, and can therefore improve the stability of a beer by preventing the formation of oxidised (cardboard) flavours.

  • 0.25 lbs Roasted Barley

    Roasted Barley

Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 1 oz Brambling Cross - 6.0 AA% pellets; boiled 60 min

    Brambling Cross

Grandparent of Saxon and Viking, they have a unique toasty, buttery, slighly resiny aroma with some woody notes.

  • White Labs WLP028 Edinburgh Scottish Ale

White Labs WLP028 Edinburgh Scottish Ale

Scotland is famous for its malty, strong ales. This yeast can reproduce complex, flavorful Scottish style ales. This yeast can be an everyday strain, similar to WLP001. Hop character is not muted with this strain, as it is with WLP002.

Notes

Brewed on May 1st, 2010, at Big Brew Day event, in honor of Greg Noonan. SS infusion mash @ 154, boiled first runnings for some kettle carmelization. Caramalt is actually Carastan, don't know what happened to it in the drop down menu, used to be there.
