Five Star 5.2 pH Stabilizer. A proprietary blend of food-grade phosphate buffers that locks in your mash and kettle water at a pH of 5.2, regardless of the starting pH. It also reduces scaling and mineral deposits on brewing equipment. 1 pound. Use at the rate of 1 tablespoon per 5 gallons of water.

From traditional London brewery with great malt and hop profile. True top cropping strain, fruity, very light, soft balanced palate, finishes slightly sweet.
Notes
1. Pacific Jade was used as the bittering hop, not Pacific Gem. 2. The Styrians were added 20 minutes after the boil finished and steeped for 20 minutes. 3. I used Demerera sugar. I dissolved it in some hot wort first and added it about 30 minutes into the boil. MASH SCHEDULE Mashed in to 16L of 76 degres C water - target temp 69 degrees C. Mashed 90 minutes. Infused 8 litres of 95 degrees C water to bring temp up to 75 Degrees C and mash out. Sparge to collect 25L of wort. 90 minute boil. Crash cooled using wort chiller. Fermented at 20 degrees C.
