Notes

This will require a yeast starter to be made. Make half gallon starter at 1.040 OG. When at high krausen add starter to second half gallon starter solution at 1.040 OG for a total starter volume of 1 gallon. Mash grains in 4.5 gallons of water @ 122 and hold for 30min. Raise temp to 152 and hold for 30 min. Mash out and sparge to bring total volume in brew pot to 7 gallons. Bring wort to boil for 60 min. When 15 min left add 13oz whole leaf Cascade hops. With 5 min left add 3 oz whole leaf Cascade hops with 1/2 teaspoon of Irish Moss. Cool to 65 degrees and pitch yeast. After primary, rack into secondary with 2 oz whole leaf Cascade hops. Yummy!
