Toast Munich and 10L crystal for 30 min at 350 deg.F. prior to combining with other malts for a step mash as per Papazian. Rack to secondary after 7 days, adding another 1 oz. of Goldings at that time.The Magnum hops,which have a low cohumulone level, result in a very smooth bitterness,even at 118 IBU.

Munich and 10L Crystal should be roated for 10 min. at 350 degrees, not 30 min. I fat fingered the keyboard when I made the entry. Tasted this beer after about 5 weeks, and it is extremely drinkable,with a smooth,high bitterness level.
