  • 2 kg Australian Pale Malt

  • 2 kg Maris Otter Pale

    An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 14 g Nelson Sauvin™ - 11.7 AA% pellets; boiled 60 min

    Nelson Sauvin™

    Early trials with Nelson Sauvin immediately revealed it to be somewhat different in its brewing character than other hop cultivars. This variety imparts certain grape like flavours to the beer; flavours which have yet to be positively identified. To acknowledge this Sauvignon Blanc flavour the variety was named Nelson Sauvin.

    BrewTek CL-160 British Draft Ale

    CL-160 gives a full bodied, well rounded flavor with threshold diacetyl. This yeast has a way of emphasizing malt character like no other yeast we've used. Highly recommended for many ale styles. Oxygenation will greatly affect attenuation.

Notes

Hops are NZ Green Bullet. One lot at 60 mins the resecnd at 0 mins and let it fall into the fermentor. Rack off after 4 days to a second fermentor utill gravity at final resting place. Then place in fridge for week. Then bottle.
