Ingredients (All Grain10.5 gal)

  • 16 lbs German 2-row Pils

    German 2-row Pils

  • 2 lbs German Wheat Malt Light

    German Wheat Malt Light

    Typical top fermented aroma, produces superb wheat beers.

  • 1 oz Hallertau - 6.0 AA% pellets; boiled 60 min

    Hallertau

    Good for all around bittering and finishing stock ales, Belgian ales, and continental style lagers. Aroma is mild, pleasant and flowery.

  • 1.5 oz Tettnanger - 4.9 AA% pellets; boiled 30 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 1.5 oz Tettnanger - 4.9 AA% pellets; boiled 15 min

    Tettnanger

    Mild, slightly spicy. 'Noble'.

  • 1 tsp Irish Moss - (omitted from calculations)

  • Wyeast 1007 German Ale™

    Wyeast 1007 German Ale™

    Ferments dry and crisp, leaving a complex but mild flavor. Produces an extremely rocky head and ferments well down to 55F.

Notes

step mash @ 122 for 30 min; 152 for 60 min and mash out @ 170. Another feature to this beer was the addition of Lemon Juice at about 1 oz. per gallon to the finished product. We added it to the keg.
