This is one of the best session beers I've ever made. So far it's been a fan favorite from everyone that drinks my stuff. It's one of if not the most requested of my recipes.

  • 13 lbs Maris Otter Pale Ale Malt; Thomas Fawcett

  • .5 lbs American Caramel 120°L

  • .75 lbs Weyermann CaraMunich® I; Weyermann

    Provides body. For Oktoberfest, bock, porter, stout, red, amber and brown ales.

  • 2.75 oz Goldings - 4.5 AA% pellets; boiled 60 min

  • Wyeast 1882-PC Thames Valley Ale II

    Wyeast 1882-PC Thames Valley Ale II

    This strain was originally sourced from a now defunct brewery on the banks of the river Thames outside of Oxford, England. Thames Valley II produces crisp, dry beers with a rich malt profile and moderate stone fruit esters. This attenuative strain is also highly flocculent resulting in bright beers not requiring filtration. A thorough diacetyl rest is recommended after fermentation is complete.

made 2qt of starter for the 10 gal batch You can also use Danstar Nottingham or windsor with this recipe. I just liked the way the Thames valley worked out but I've used all 3 with the recipe I've mashed at 154 for 60 min using 1.3 qt of water to lb/grain ratio. raise to 170 for 10 min. mash out and rinse to collect a total of 11.5 gal of wort for the boil. I fermented at 66 for 8 days. I then just lowered the temp to 33 for one week in the fermenter. Kegged and let condition for one week in the keg. It's best to drink this beer when it is young.

It's hard to keep a pint glass full with this stuff. Serve it at 50-55 degrees to get the true aroma and flavor from this classic beer style.

Hey Pat. I bet this would be good with a WLP 002 yeast too. Here's another certified Toppoppa recipe to try. I've got a bunch of Willamette hops to use too. Maybe I can add some with the Goldings.

They didnt have all the ingredients at my brew store but came close. It was my first all grain with my homeade equiptment. Of course I ran into a few problems but the beer was perfect. So good Im making it again today. Maybe this time I will share.

I have an English Mild right now that is very similar in style to this. The grain bill is almost identical but I added a little pale chocolate malt for some added complexity. Glad you liked the recipe. Brew on!

I just tapped the keg on this brew and I must say this is a very tasty beer. Good hoppy flavour with a residual sweetness. A must brew again.
