I made this per the recipe in Beer Captured as my 3rd ever homebrew and my first attempt at all grain. I forgot to add one grain and used a dry malt instead. People loved it so I had to retry it with the proper grains. I also used yeast that I saved from a previous batch of Belgian Ale. I am very pleased with this batch and those that loved my first Kolsch are really loving this one!! Enjoy!!

Ingredients (All Grain5 gal)

  • 7.5 lbs German 2-row Pils

  • 1 lbs German Light Munich

  • 0.75 lbs German Wheat Malt Light

    Typical top fermented aroma, produces superb wheat beers.

  • 1.3 oz Hallertauer Hersbrucker - 4.3 AA% whole; boiled 60 min

    Mild to strong. 'Noble'.

  • 0.35 oz Saaz - 5.0 AA% whole; boiled 15 min

    Used for finishing pilseners, continental lagers, and wheats. The aroma is spicy and pleasant with fragrant overtones.

  • 0.3 oz Saaz - 5.0 AA% whole; boiled 5 min

  • 1 tsp Irish Moss - (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.
