This came out to be malty as 90 minutes IPA with more aroma like Pliney. I will brew this more and more.

Ingredients (All Grain8.5 gal)

  • 18.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 4 lbs Pilsner Malt; Rahr

    Pilsner Malt; Rahr

    A principal ingredient of cask ales using heritage barleys.

  • .75 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • .75 lbs Crystal Malt 40°L

    Crystal Malt 40°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1.5 lbs White Table Sugar (Sucrose)

    White Table Sugar (Sucrose)

    Common household table/baking sugar. Lightens flavor and body of beer. Can contribute a cider-like flavor to the beer if not cold-fermented or used in large quantities.

  • 3 oz Warrior® - 15.8 AA% pellets; boiled 90 min

  • 1.5 oz Chinook - 13.0 AA% pellets; boiled 90 min

    Spicy, Medium to Heavy.Very strong bittering ability used in all American ales and lagers. Aroma is very floral.

  • White Labs WLP001 California Ale

    White Labs WLP001 California Ale

    This yeast is famous for its clean flavors, balance and ability to be used in almost any style ale. It accentuates the hop flavors and is extremely versatile.

Notes

Add 1 oz Simco and 1 oz Chinook to the mash. One step mash at 160 F for 90 min. 1.5 oz Columbus 30 min boil. 1.5 Cascade 1 min. boil. 1.5 Amario, 1.5 Chinook, and 1.5 Cascade at end of boil. 10 days primary, then transfer to secondary and dry hop with 4 oz Columbus, 3.5 oz Cascade, and 1 oz Willamett for 2 weeks. The OG is actually 1.070 and FG is 1.010, so the ABV is 8%. It is the best IPA I ever tasted.
