  • 11 lbs Maris Otter Pale Ale Malt; Thomas Fawcett

    A principal ingredient of cask ales using heritage barleys.

  • .5 lbs English Wheat Malt

    English Wheat Malt

    Light flavor, creamy head. For wheat beers, stouts, doppelbocks and alt beers.

  • .5 lbs Belgian Special B

    Belgian Special B

  • .5 lbs Belgian Biscuit

    Belgian Biscuit

    Warm baked biscuit flavor and aroma. Increases body. Use in Belgian beers.

  • 1 lbs Light Brown Sugar

    Light Brown Sugar

    Imparts rich, sweet flavor. Use in Scottish ales, old ales and holiday beers.

  • 3 oz Fuggle - 4.0 AA% pellets; boiled 60 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 1.5 oz East Kent Goldings - 5.0 AA% pellets; boiled 15 min

    Mild, slightly flowery.

  • 1 tbsp Irish Moss - Irish Moss (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

  • Wyeast 1768-PC English Special Bitter

    Wyeast 1768-PC English Special Bitter

    A great yeast for malt predominate ales. Produces light fruit and ethanol aromas along with soft, nutty flavors. Exhibits a mild malt profile with a neutral finish. Bright beers are easily achieved without any filtration. It is similar to our 1968 London ESB Ale but slightly less flocculent.

Notes

Mash 150' for 1hr, Sparge 1.5hr with .5 gal per lb, add 3.5 gal water to boil kettle. boil 90 min Add sugar at 30 mins. Irish Moss 15 mins. Ferment 68' for 7 days.

If you used pellets, just edit your recipe and re-save it. Did that turn out quite bitter? Maybe that's what the judged liked?

I didn't read the recipe properly. I thought you put 4.5 oz hops in a 5 gallon batch. Duh. Look like a good recipe. When you edit your recipe, there is a button on the bottom that says calculate. This is the save button. Cheers
