2-Row Brewers Malt; Briess
Mild malty flavor. Characteristics & Applications: • Base malt for all beer styles • Smoother, less grainy flavor than 6-Row Brewers Malt. • Slightly higher yield than 6-Row Brewers Malt. • Slight lower protein than 6-Row Brewers Malt. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

2-Row Caramel Malt 80L; Briess
2-Row Caramel Malt 80L; Briess
Pronounced Caramel, Slight Burnt Sugar, Raisiny, Prune. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam, foam retention, and extended beer stability, while contributing color and unique caramel flavor. • 2-Row Caramel Malt 80L is a roasted caramel malt that imparts red to deep red color. • Use 3-15% in Amber and Red beers. • Use 10-15% in Bock beers. • Use 7-15% in Dark beers. • Use 10-15% in Porter and Stout. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Brew Notes

I brewed this on 10/10/09 and had to tap it early for lack of beer. It was GREEN and I thought it was really good. First Keg was done by end of October so I brought the second keg out and now its 11/8/09 and its had some time to mature (not much) and its even better. I am now trying to put it back into the brew schedule for another batch.
Real Deal

I will say that I've never drank the real Sierra version of this so I don't know what it is suppose to taste like. But I really like what I made and had to share this recipe. I am more of a lurker than a poster.
Oh Crap!!!!!!

Well this poor brew is only 1 month old and all 10 Gallons are GONE! Going to brew again this weekend. Which is way ahead of schedule. This combination suites me very well.
I'm Drinking Celebration Ale Right Now

Celebration is one of my favorite seasonals. I don't know where you live but if you want to try to compare it is easily available here in the SF Bay area. I'm sure some kind of arrangement can be made.
Thanks

Hey "PaintModel" thanks for the offer. But I get around the country during the new year and I should be able to track some down. I am really interested in finding out if mine taste like "Siera's'". This was one of my all time favorite homebrews.
Taste

I finally made it to a tap room serving Sierra Nevada Celebration. While I did not have mine side by side it was very similar in taste to the one I made. My version was somewhat darker. I am planning on using a lighter caramel roast the next time around. It is now Christmas and I have not had time to remake this recipe. It will go on the brew schedule the end of January. If anyone else has made this or another recipe for celebration give me a yell. Thanks
