This is my 2009 holiday beer. My numbers are a little different based on my brewhouse efficiency, but really close.

German-grown two-row spring barley (2004 harvest). Product Characteristics: CARAFA SPECIAL® is the de-husked version of CARAFA®. Using our unique process, we remove the husks from carefully selected grains before malting and roasting them. Reduces astringency and bitterness, while adding coffee-brown color, a coffee-like bouquet, dark-beer aroma, as well as body and mouthfeel to finished beer—but without introducing harsh flavors. Even small amounts of CARAFA SPECIAL® malts in the grain bill produce dark beers of unusual smoothness and mildness with a firm, creamy, white head. Rich with a dry finish, minerally profile, bold and crisp, with some fruitiness.
Notes
Replaced some of the Roasted Barley & Chocolate Malt with Carafa Special II to reduce some astringency in the beer. Make a cold infusion with 8.0 oz ground coffee (Peets) in 16oz sterilized H2O for a week. Add this and the Cocoa Powder (unsweetened) to the secondary.

Discussion
Smooth with great coffee and chocolate flavors

This is developing into a smooth beer. The coffee flavors are still too pronounced, but will mellow with a little age. If I did this again I would add the pure cocoa powder into the end of the boil, as most of it dropped out in when added to the secondary. Still has plenty of chocolate flavor, though.
