    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

This was my first time using Wyeast 1272 and there is a distinctive fruitiness that isn't there with 1056. It adds a nice character that balances well with the hop kick. I had also never had a primary take as long as it did with this one, after 10 days it was still perculating through the blow off hose fairly steady. I'm not sure if that was due to the yeast, the higher gravity, the cooler temps, or all of those factors. It spent another 14 days in the secondary with the dry hops. It has been in the bottle almost a month now and it just keeps getting better week over week.
