Characteristics & Applications: • The endosperm is completely glassy and will appear to be darker than standard Brewers Malt. • Carapils® is a very unique dextrine-style malt that adds body, foam retention, and beer stability without influencing color or flavor. • Use to upgrade all types of beer, including light colored beers. • The non-fermentables in Carapils® are very advantageous in balancing body and flavor of dark colored beers. • May be used with or without other specialty malts. • Low usage of 1-5% will help achieve desired results. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Five Star 5.2 pH Stabilizer. A proprietary blend of food-grade phosphate buffers that locks in your mash and kettle water at a pH of 5.2, regardless of the starting pH. It also reduces scaling and mineral deposits on brewing equipment. 1 pound. Use at the rate of 1 tablespoon per 5 gallons of water.

A unique strain, capable of producing fine lagers. Very smooth, well-rounded and full-bodied. Benefits from temperature rise for diacetyl rest.
Notes
1. 3 stage infusion mash 50/63/70 degrees celsius. Raised to 75 degrees and sparged. 2. I used Green Bullet, not Northern Brewer for the bittering. 3. The Hallertauer hops were Pacifica (Pacific Hallertau), added 15 minutes after the completion of the boil and steeped for 15 minutes. 6. Fermented @ 10*C.

This my second shot at a Helles, and I think I got it right. It's sweet with just enough hop to stop it being cloying. It's definitely going on to high rotation.
