    Well modified, full flavour.

  • 0.51 kg 2-Row Caramel Malt 10L; Briess

    2-Row Caramel Malt 10L; Briess

    Golden color and a candy like sweetness. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

    This product is used in the production of Porters and sweet Stouts. The flavour is sharp and somewhat acrid. A great deal of care is needed in the use of this material because of its intense colour and flavour. Manufacture is similar to Amber malt but higher final temperatures are used. Flavour again is due to pyrazines and pyrroles.

    Northern Brewer

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

  • 38 g Cascade - 5.5 AA% pellets; boiled 15 min

    Spicy with citrus notes. Slightly grapefruity.

  • 25 g Northern Brewer - 8.0 AA% pellets; boiled 10 min

    Used for bittering with strong flavors and very fragrant in steam beers, dark English ales, and German lagers. Aroma is medium-strong with evergreen and mint overtones.

Great Beer

I brewed this in may this year . I was at my brew club meeting a couple of months ago and my fellow brewers suggested it was good enough to place it into the state comps . It received a second place out of 32 entries with a score of 143 . My mash temp 69.5*C for 1hr with 25gm of Nthn Brewer mash hop 1hr into 16.82 lt water . Mashed out with 9.42lt of water to bring the temp up to 75.6*C and batch sparged with 12lt . First hop boil 60 min 31gm Nthn brewer,15 min 38gm Cascade , 10 min 25gm Nthn brewer , 1 min 37gm Cascade ,O.G.was 1.062, F.G. 1.022 fermented at 20*C. for 7 days then transferred to secondary for 7 days bulk primed and bottled . Judges comments :"very polished flavoursome beer,with a lingering fine bitterness" , "dry after taste good" and "clean and faultless" .Yeah it was so nice all I had left was one pint for the comp .
