The most famous ale yeast strain found across America, now available as a ready-to-pitch dry yeast. Produces well balanced beers with low diacetyl and a very clean, crisp end palate. Sedimentation: low to medium. Final gravity: medium. Pitching instructions: Re-hydrate the dry yeast into yeast cream in a stirred vessel prior to pitching. Sprinkle the dry yeast in 10 times its own weight of sterile water or wort at 27C± 3C(80F ±6F). Once the expected weight of dry yeast is reconstituted into cream by this method (this takes about 15 to 30 minutes), maintain a gentle stirring for another 30 minutes. Then pitch the resultant cream into the fermentation vessel. Alternatively, pitch dry yeast directly in the fermentation vessel providing the temperature of the wort is above 20C(68F). Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes and then mix the wort e.g. using aeration.
Notes
Blueberries were lightly crushed and heated to 160 F to pasteurize, added to the primary after initial fermintation slowed. Hops & blueberries both home-grown, which means IBU figure is a wild guess; used the low end of the alpha range for Cascades. Cara-pils was German this time, not Belgian. Using BIAB technique, OG hit 1.059 precisely, using 90 min. immersion 'sparge' at 158 F. w/ stirring every 10-20 min, followed by a 75 min boil. Added Servomyces cap. w/ Irish Moss addition, to try to hit the FG. mark. Brewed 8/24/09 Added berries in grain bag 8/25 8/26/09 Removed berries, added 15 drops alpha-galactosidase enzyme & moved to secondary. Also added a few wine-soaked toasted oak chips from WineCountryWoodsInc.com @ 1.024- it's quite murky (w/ pectin from berries, I think 8/28 1.013 9/1 1.008 9/3 1.006 9/19 1.001 (!) OK, thats DRY. 9/28 Added 1 envelope gelatin fining to clarify and chill to 60 F. before bottling,

Discussion
Surprisingly good for FG of 1.001

This brew has received a thumbs-up from all who have tried it; it's not as thin as the FG might suggest, and the flavor is winey and rich. It's dry, but not objectionably so. If I were to repeat the experiment, I'd add the beano to the mash, so the enzyme would be deactivated by the boil; using it post-boil makes for a VERY long wait while the fermintation gradually creeps toward the ultimate FG. It's very easy to bottle too early unless you're very patient.
