Oysters in beer? Sounds wierd, but this is my second batch of this. There is really no perseptable oyster flavor, just really smooth and round stout flavor to enjoy. Amazing! Mikey

Ingredients (All Grain5 gal)

  • 8.25 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1.0 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • .5 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • .75 lbs British Black Patent

    British Black Patent

    Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • .5 lbs Oats Flaked

    Oats Flaked

    Belgian White Ale(wit), other specialty beers.

  • 1.5 oz Fuggle - 4.9 AA% whole; boiled 60 min

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • 0.5 oz Fuggle - 4.8 AA% whole; boiled 20 min

    Slight residual diacetyl and fruitiness; great for stouts. Clean, smooth, soft and full-bodied.

Notes

Unwin Oyster Stout turned out great, but needs a little more hop balance, and I am trying whole oysters this batch. I really don't like or eat oysters, but the first batch turned out so good, I had to do another for a great upcoming beer festival. Organic 'Hallertau' listed is really Organic 'Saphire' Hops. Last 20 min of boil add 10 (scrubbed clean) whole oysters (cracked with brine). Use hardened filtered water. Ferment @ 68-70 F for 1wk. After fermentation is complete (~7days) reduce temp by 5 degrees/day until down to 40 F, lager at this temp for 1-6 wks before kegging.

Even better than the first batch

This beer did spectacular at the brew festival, all 5 Gal were gone after only 50 min, serving 3 oz samples! A real winner.

The first batch was a little too sweet, added a little more hop bitterness this batch, it is just right now (unless your a hop head), easy to qualf a pint or two. Will present at Nov/09 beerfest in st. Pete, Fl (Cajun Cafe).
