Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.
Notes
Currahee American Pale Ale was concocted by Beer Baron Breweries Brewmeister J.P. Spencer on 9 September 2001. This brew was made in honor of the HBO Mini Series "Band of Brothers" and their struggle on the European Front during WWII. *NOTES* 1) This brew does not have to be shifted to secondary, but it is recommended. Do so 3 days after fermentation has subsided in primary. 2) Dry hopping is essential to this brew. The light aroma of the Liberty Hops will add a pleasant nose to the brew when initially opened. 3) The cinnimon stick(s) should be added directly to the cooled wort after transfer to the primary fermenter. This will only add a slight cinnamon flavor to the Ale, and not offset the character of a Pale too much. (Added to demonstrate the 'Fire' of the Airborne Troopers during WWII).
