Ingredients (All Grain5.5 gal)

  • 14 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • .5 lbs Belgian Wheat Malt

    Belgian Wheat Malt

    Malted wheat for use in Wheat beers.

  • .5 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1.5 oz Cluster - 7.3 AA% pellets; boiled 60 min

    Cluster

    Used for bittering and flavor qualities in light and dark American lagers. Aroma is very floral.

  • .5 oz Fuggle - 5.0 AA% whole; boiled 15 min

    Fuggle

    Mild. Mainly used for finishing and dry hopping especially pale ales, porters, and stouts. Aroma is mild and pleasant, spicy, and soft.

  • .5 oz Cascade - 5.9 AA% whole; boiled 15 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

  • .5 oz Fuggle - 5.0 AA% whole; boiled 1 min

    Highly flocculant top-fermenting strain with rich, malty character and balanced fruitiness. This strain is so flocculant that additional aeration and agitation is needed. An excellent strain for cask-conditioned ales.

Notes

Mash @ 158 degrees for 90 minutes (strike was 172 degrees) Crystal was 15L NOT 20L repitched 2nd usage (5 weeks old stored under can of beer) Used O2 for first time Ferment was too hot for first 3 days 80 - 81 degrees Then, moved to A/C for remainder In primary 2 weeks Secondary 2 weeks Then, Keg - Green for 1 week Then Great, but need to up bitterness, use more Cluster (2 oz.)
