Monument Middle Brother Pale Ale

This brew's previous incarnation won a Silver Medal at the WA Amatuer Brewers Competition in 2009. This is the final recipe, based on feedback from that comp. It's really really good.

Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

Carapils®/Carafoam®; Weyermann®
German-grown two-row spring barley (2004 harvest). Product Characteristics: Same color rating and brewing characteristics as regular Weyermann Pilsner Malt, except for enhanced foam production, head retention, and fuller body and mouthfeel. Recommended Quantities: Up to 5% of total grain bill for pale/blond beers; up to 40% for Bockbier Suitability (beer styles): Lagers: Pils/Pilsner/Pilsener, all pale to golden lagers, low-alcohol beer, “light“ beer, Bockbier

5.2 pH Stabilizer
Five Star 5.2 pH Stabilizer. A proprietary blend of food-grade phosphate buffers that locks in your mash and kettle water at a pH of 5.2, regardless of the starting pH. It also reduces scaling and mineral deposits on brewing equipment. 1 pound. Use at the rate of 1 tablespoon per 5 gallons of water.

Produces classic British bitters, rich complex flavor profile, clean, light malt character, low fruitiness, low esters, well-balanced.
Notes
1. I didn't actually use Centennial hops when I brewed this - I used Pacific Jade which is not on the list. 2. Mashed at 69*C for 90 minutes . 3. Step up to 75*C and mash out. 4. 90 minute boil.

This is great...

This beer is now 6 weeks or so in bottle and it is fantastic. The hops really come through giving it heaps of flowers, but it also has plenty of sweet malt flavour.
