Tony's Amber Ale
American Amber Ale • All Grain • 5 gal
Using Simcoe and Cascade hops this is a tasty red amber ale! Make sure to use PALE chocolate malt, which is not an option in the recipe calculator. It should only be around 200 L in color (normal chocolate malt is around 500 L). This is why the recipe appears much darker here than it is in reality. It should be a deep red color, not black. Also, a less pronounced malty flavor can be achieved by using more Maris Otter and less Munich. Let me know how it turns out for you!

Maris Otter Pale
Maris Otter Pale
An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

Ok so this beer needs to bottle condition for at least a month at room temp to get the best out this. But man! It is worth the wait. This is now one of my personal favorites.
