This brew turned out to be delicious. It originally started out as a Road Dog Ale clone from Scott Russell's book, "Clone Brews." But I decided to thrown in an ounce of Black Patent since it was laying around. Excellent brew, give it a whirl!

Ingredients (All Grain5.25 gal)

  • 8 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • 1 lbs American Caramel 60°L

    American Caramel 60°L

    Mild caramel,nutty flavor, sweet. adds color

  • .125 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • .0625 lbs British Black Patent

    British Black Patent

    Dry, burnt, chalky character. Use in porters, stouts, brown ales and dark lagers.

  • .5 oz Target - 11.0 AA% pellets; boiled 45 min

    Used for its robust bittering ability in British ales and lagers. Aroma is quite intense.

  • 1 tsp Irish Moss - (omitted from calculations)

  • Wyeast 3766 Cider

    Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

Notes

Conduct single-infusion mash @ 153F for 90 min. Batch sparge w/ 170F to collect 6.5 gals of wort. Boil for 60 minutes, and hops with 45 min. remaining. Add Irish Moss during last 15 minutes of boil. Chill and pitch yeast as usual. Kept in primary for 14 days, in secondary for 14 days. Bottled and primed w/ corn sugar and brown sugar. Aged at room temp for 2-3 weeks before cold aging at 42F.
