Very little banana flavor derived from the bananas - was trying to reproduce Young's Banana Bread Beer - will try to figure out the banana flavor on the next batch - excellent hefeweizen anyway however

  • White Labs WLP320 American Hefeweizen Ale

White Labs WLP320 American Hefeweizen Ale

This yeast is used to produce the Oregon style American Hefeweizen. Unlike WLP300, this yeast produces a very slight amount of the banana and clove notes. It produces some sulfur, but is otherwise a clean fermenting yeast, which does not flocculate well,

Notes

Also added ~5 cups pureed bananas

Yeast Recommendation...

I would recommend using the WLP300, or a German Hef yeast of your choice. This would really bring out the banana taste, way more so than the American Hef yeast could.

I followed this for the most part. Used 2lbs sliced (not pureed) bananas in the secondary. Also added 2 tbs vanilla extract. Came close, but still not Young's. Friends and family couldn't tell the difference.
