    Warm baked biscuit flavor and aroma. Increases body. Use in Belgian beers.

    From Southern Germany, this yeast finishes malty with a slight ester profile. Use in beers such as Oktoberfest, Bock, and Dark Lagers.

Notes

Use a decoction mash in this one to bring out the full flavor. I only decoct about 1 gallon while the grist is resting at 130. Stir the whole time, even after the separated portion is boiling or you will scorch it and your beer will taste like burnt malt! Then add back to tun and heat to 150 for 60 minutes, 159 for 20 minutes, and mash out at 165. Let this one sit for 2 months at least, below 40 deg. If you want a redder color, switch the german dark crystal with some 80L Crystal.
