  • 28 lbs Belgian Pils

    Pilsner style malted barley grain.

  • 1 lbs Belgian Cara-Pils

    Belgian Cara-Pils

    Significantly increases foam/head retention and body of the beer.

  • 2 lbs Candi Sugar Clear

    Candi Sugar Clear

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 2 oz Styrian Goldings - 6.0 AA% whole; boiled 60 min

    Mild, pleasant.

  • 2 oz Spalt Spalter - 4.8 AA% whole; boiled 20 min

Did two different batches

One batch was a straight tripel, and took first place in a local competition in the Belgian category. The other batch, I aged an extra 4 months, adding a of a bottle (12 oz) of Lindman's Raspberry Framboise to five gallons. After three more months of aging, it is extraordinary. It is hard to tell it is over 9% alcohol. Truly unique belgian, well balanced with the subtle raspberry. I cannot recommend this enough (it just takes patience - lots of patience.)

Did you age the two batches in carboys, kegs, or in the case of the straight batch - bottles?

Both batches were aged in carboys. The raspberry added batch has also bottle conditioned for six weeks.

Did you think about using the Wyeast 3787 Trappist High Gravity?
