Ingredients (All Grain5.53 gal)

  • 7 lbs Maris Otter Pale

    Maris Otter Pale

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 1 lbs German Vienna

    German Vienna

Increases malty flavor, provides balance. Use in Vienna, Märzen and Oktoberfest.

  • .5 lbs Crystal Malt 120°L

    Crystal Malt 120°L

Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • .5 lbs Melanoidin Malt

    Melanoidin Malt

    Red Ales

  • .15 lbs Black Roasted Barley

    Black Roasted Barley

Unmalted roasted grain, it is the backbone of many stouts. Imparts a sharp acrid flavor characteristic of dry stouts. Gives "dryness" to a stout or porter ,more so than regular Roasted Barley.

  • .5 lbs Barley Flaked

    Barley Flaked

Helps head retention, imparts creamy smoothness. For porters and stouts.

  • .25 lbs Oats Flaked

    Oats Flaked

Belgian White Ale(wit), other specialty beers.

  • 1.23 oz Challenger - 6.3 AA% pellets; boiled 65 min

    Challenger

Popular bittering hop used primarily in British ales and lagers. Mild to moderate aroma, but quite spicy.

  • 1 tsp Irish Moss - (omitted from calculations)

    Irish Moss

  • 1 tbsp 5.2 pH Stabilizer - (omitted from calculations)

    5.2 pH Stabilizer

  • White Labs WLP004 Irish Stout

    White Labs WLP004 Irish Stout

This is the yeast from one of the oldest stout producing breweries in the world. It produces a slight hint of diacetyl, balanced by a light frui|iness and slight dry crispness. Great for Irish ales, stouts, porters, browns, reds and a very interesting pal

I'm still waiting to try it. I've only got room for 2 kegs in my kegerator, but I'm anxious to give it a try. I'll post the results soon.

Nice Irish Red

2009-04-07 8:28pm

This turned out very nice. Malty, slightly sweet up front with a pronounced, but not overwhelming, caramel/buttery flavor. Hint of roasted malt. Finishes slightly dry. Good smooth mouth feel. Deep red-brown in color. The best Irish Red I've brewed to date. Very pleased with the results.
