Ingredients (Extract5 gal)

  • 1/4 lbs Crystal Malt 60°L

    Crystal Malt 60°L

    Sweet caramel flavor, deep golden to red color. For dark amber and brown ales.

  • 1 lbs Honey Malt

    Honey Malt

    Nutty honey flavor. For brown ales, Belgian wheats, bocks and many other styles.

  • 3 1/3 lbs Dry Extra Light; Muntons

    Dry Extra Light; Muntons

    Contains no colored malts or unmalted products; the light color of this product is achieved by using low processing temperatures and low-colored raw materials.

  • 1 3/4 lbs Gold Dry; Northwestern

    Gold Dry; Northwestern

    Can be used in making Pilsner, Pale Ale, Dortmunder, Marzen and other Lagers.

  • 2.25 oz East Kent Goldings - 5.0 AA% whole; boiled 45 min

    East Kent Goldings

    Mild, slightly flowery.

  • 1 oz Cascade - 5.5 AA% whole; boiled 15 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Cascade - 5.5 AA% whole; boiled 1 min

    Wyeast 3766 Cider

    Crisp dry fermenting yeast with big, fruity finish. Creates a nice balance for all types of apples, pears and other fruit or fermentables. Allows fruit character to dominate the profile.

Notes

Honey Malt and Crystal Malt mashed for 10 min at 150 deg and 15 min at 160 deg with 1/2 gal h2o and sparged with 1/2 gal boiling h2o. 2 oz heather tips added at beginning of boil. strained out at 45 min. 2 oz added at end steeped with aroma hops and strained out. Gypsum added at beginning. Irish Moss added at last 15 min. Pitched at 75 deg.
