slightly tart and very refreshing, and the wheat and rye give a nice grainy character. when the beer is young, the tartness is fairly strong but it will mellow quite nicely after a week or so.

A dry fermenting, true top cropping yeast which produces a dry, slightly tart, crisp beer, in American hefeweisen style.
Notes
For hops, I used an abbreviated version of Jamil's as used in his "Kent's Hollow Leg" recipe. Use a large fermentation vessel for this; all the protein in the wort plus this yeast = a lot of bubbling and potential blowoff. If you are milling the malt, you may have to adjust your rollers a bit since the wheat and rye berries run a bit smaller than the barley malt kernels.
