Ingredients (All Grain7 gal)

  • 5.5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 6.5 lbs White Wheat Malt

    White Wheat Malt

    Weizens. Improves head retention in all beers. Contributes spicy flavor. Protein rest required.

  • .35 oz Willamette - 5.0 AA% pellets; boiled 90 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • 1 oz Willamette - 5.0 AA% pellets; boiled 5 min

  • 1 oz Centennial - 8.0 AA% pellets; boiled 5 min

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 1 oz Simcoe® - 11.9 AA% pellets; boiled 5 min

    Used for aromatic, and especially bittering properties.

  • 4 oz Cascade - 6.0 AA% whole; boiled 0 min

    Spicy with citrus notes. Slightly grapefruity.

  • 1 oz Willamette - 5.0 AA% pellets; added dry to primary fermenter

Notes

Mash at 152F. Boil 90 minutes. Ferment at 65F. Note: I actually used Red Wheat in this brew.

Used the HopBack for the 4 oz. of Cascade at flameout. Decide to try using a bunch of whole hops without bagging them. Toward the end of the runoff the HopBack got a little clogged, but nothing major. It did its job and filtered a lot of the break material. I also boiled a little longer than I originally planned and hit a slightly higher OG. OG: 1.052 #93
