Belgian Golden Strong

Prepared my own candi sugar using 16oz of organic unbleached cane sugar, 1/2 tsp diammonium phosphate, lemon juice, and the juice of one fresh sweet orange (was tempted to add some zest, but thought better of it). Brought to 290 degrees and back down to 240 3 times and let simmer at about 230 for about an hour and a half. It was a deep reddish color. Steeped grains at 148 for 60 minutes. Then for 15 at 159. Then 10 minutes at 169. Batch sparged. 90 minute boil. Added a couple table spoons of special dark cocoa powder at beginning of 90 minutes. 6-8 oz of dark brown sugar at 60 minutes (didn't measure exactly).
