  • .5 lbs Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • .25 lbs Special Roast Malt; Briess

    Special Roast Malt; Briess

    Toasty, biscuity, sour, tangy flavors. Characteristics & Applications: • Excellent for Nut Brown Ales, Porter and other dark beer styles. • Special processing develops unique Toasty, Biscuity, Sour, Tangy flavors distinctive to Special Roast Malt . • Produced from AMBA/BMBRI recommended 6-Row Malting Barley varieties.

Notes

Mash at 152F for 60 minutes. Boil 90 minutes. Ferment at 68F.

Used 75% spring water, 25% reverse osmosis water. Acidified strike and sparge water to 4.8 pH. Mashed at 152F, mash pH was 5.3. Mashout temp was 164F, pH was 5.45. Boiled 90 minutes. Initial chill temp was 67F. Original gravity was 1.038. Pitched about 150 billion yeast cells at 64F. Fermented at 68F. #85

Kegged it and it tasted really good. Even without carbonation, it was surprisingly tasty, especially for such a low gravity beer. I'm really picky when it comes to English beers and I really like how this one turned out. It has a very complex flavor profile consisting of a light fruityness from the yeast, a delicate bready/malty flavor, and a pleasant woody/herbal supporting hop character that finishes with a smooth bitterness.

Brewing again 2/15/08

Brewing it again today. Replaced the Golden Promise with Maris Otter. Increased the bittering hops a bit to compensate for using more water in my process now.
