A unique strain, capable of producing fine lagers. Very smooth, well-rounded and full-bodied. Benefits from temperature rise for diacetyl rest.
Notes
Pitched yeast at 75` then reduced temperature to 56` over four days for primary (two weeks). Racked to secondary drop temperature to 46`-48` (two weeks), then held at 34`-38` for 6 weeks. Prior to bottling raised temperature to 60` for two days. Primed with corn sugar.
