Wyeast 2112 California Lager™
Wyeast 2112 California Lager™
Particularly suited for producing 19th century-style West Coast beers. Retains lager characteristics at temperatures up to 65F, and produces malty, brilliantly-clear beers.
Notes
Make a 1 gallon starter several days in advance, after krausen falls, rack liquid off and pitch slurry. I have a Tettnang bine that did well this year, so I am going for broke as it is my favoirte hop. Of course, use Whirlfloc or Irish moss in the boil. Ferment at 60F, then secondary at 50 for minimum 3 weeks.
