OK folks... Well I forgot to ask my friend for the hops that I wanted to use so I subed the out for what I had in the ice box. Probably better that way so the older hops get used up. I also mussed up the first hop addition of OPG by measureing out .5oz instead of .25oz so I changed the boil exposure time to compensate, but I still boiled 60 mins total. I really do not want this beer to be hoppy but rather fragrent. Check back for OG's and temps.

Well I screwed something up. My OG was only 1.032. That makes only about a 45% mash efficency. Flavor is good but it will be light on the alcohol. Not to mention that I screwed up the hops. I can see that is going to be one of those that I am going to tweek and brew a couple of times. I really do enjoy cream ales and I want to perfect my own. Oh well back to th drawing board on this one.

I have changed this recipe back to what I originally wanted it to be and not how I ended up brewing it. If you want to know what I did exactly I will list it here. 7lbs Am. 2 Row .25lbs Crystal 10L .5lbs White Wheat Malt 1.5lbs Maize Flaked .25 Lactose Sugar (added in boil) .5oz Org. Pac. Gem 15� Leaf 35 mins (accicdent which I corrected by removing hops after 35 mins) .5oz EKG 5% Leaf 15 mins .5oz Willamette 5% Leaf 5mins WYeast 1056 Am. Ale Mashed @ 148F for 60mins Boiled 6.5gal for 60mins OG 1.032 I will post more notes after its finished fermenting which should be soon.
My Poor Ale

Well its official, my Krispy Cream Ale is a total bust. I thought that the tragedy would be over when I first found out that my OG was only 1.029, but that was just not the case. I was checking on my fermenter everyday during the initial fermentation and when I came home from school one day I found that the crouzen had popped my top off of my fermenter. I had no idea when it happened so I had no idea how long it had been exposed. So, I sanitzed the exposed parts and hoped for the best. It turns out that it was infected. I was curious to see where I was at today so I was going to take a reading before I started to bottle. As soon as I opened the fermenter I could smell horrible acidity. It was enough to make the eyes water. I wanted to make sure it was really fouled so I did still take the thief and sample the wort. It was deffinaly sour. So a beer went wrong turned for the worst and is now sewage. I didn't even want to pull off the yeast to propogate it because I was afraid that I would carry the infection over. So much for that. $30 bucks down the drain and nothing to show for it excpet a dirty fermenting bucket.

I have since brewed this beer again and it turned out great. I have simplified the recipe and its a great beer. I am making this one of my "house" beers along with my helles and I also intend on throwing an a mild or other English/Scottish low gravity in there.

After trials and tribulations I have found the best recipe for what I am trying to accomplish. Everyone really enjoys this beer and it goes fast.

I'm about to try and brew this recipe tomorrow. I am lowering it to a five gallon batch, though, and I am using some other crazy named hops.
The Secret

TheBuffalo, The secret to this beer is that you have to let it cold condition (lager) for at least four weeks after you bottle or keg it. If you are going to bottle and cold condition right away make sure you are using WLP080, which has a lager yeast strain in it, so that you get your bottle fermentation to carbonate. Also don't drop your temp too low. You can also bottle condition at room temp and then lager. It will just take longer. If you are kegging then there are really no worries. Don't worry to much about the hops. I just used Sticklebract because that is what I had laying around and it was a high alpha bittering hop. I actually have the ingredients laying around for this as well. I will probably brew it with in the next couple of weeks. Let me know how it comes out. Good Luck!

Okay, I bottled it. Tasted a little high on the alcohol but that might be because its warm and uncarbonated.
Question on boil time

I'm going to try this recipe tomorrow. Is the boil 90 minutes or 60 minutes? If 90, how long for the hops? If the hops are only 60 min should they be added 30 minutes after the boil starts or taken out 30 minutes before the boil is done? Thanks!
