This will be brewed August 2, 2008. This will also be a slight change from the Honey Vienna Ale recipie. I am experimenting with a berry flavor and also I'd like to change the character of the beer itself. I would like more caramel flavor and a little less "thick" vienna flavor compared to the Honey Vienna Ale recipie. Depending how the first fermentation tastes, I will get a good indication of the flavor I am looking for. I'll decide at that point if the fresh blackberries will be a good addition. I forgot to add honey until I put it into first fermenter and had already pitched yeast. I heated up honey and cooled then put into fermenter. I added three pounds of blackberries. Update...This beer was very good. The tart taste of the blackberries made this one very special beer.
